Spicy Spinach Pizza Roll
A basic pizza dough can complement any variety of flavors. This dough is seasoned only lightly with extra virgin oil and kosher salt. It is best to use the dough immediately, but it can also be made in advanced and refrigerated up to a day ahead, or frozen for up to a month. If using frozen or chilled dough, allow it to both thaw completely and rise slightly before cooking.
Serves 4-6



  • 1 recipe Basic Pizza Dough
  • 2 cups Arrabbiata Sauce
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach, washed and trimmed
  • 4 cloves garlic, minced
  • 1/4 cup corn meal
  • Olive Oil
  • Kosher salt
  1. With a rolling pin, shape the pizza dough into a 12"x18" rectangle so that the longer side is facing towards you.
  2. Cover the dough with an even layer of sauce. Leaving a 1/2" border on all sides, top the pizza with the mozzarella, 1/4 cup Parmesan, spinach, and garlic. Drizzle with olive oil and season liberally with kosher salt.
  3. Starting in the center of one side, begin to roll the pizza into a pinwheel shape. As you roll the dough, pull each side away from the center to lengthen the roll. Place the pizza roll seam side down on a baking sheet dusted with corn meal. Drizzle the roll with olive oil, and sprinkle the remaining cheese over the top.
  4. Bake the roll for 30-35 minutes, or until the crust has risen and the cheese is golden brown. Let cool for 15 minutes, then cut on the bias and serve.
